Why girls do this to guys?

well seems like she didn't want him to get hurt or anything and like she wants to take care of her little brother because she wants to be a nice caring responsible older sister...she was upset because it hurt her that you went against her and just not accepted her wishes, she was just trying to be a good sister and also like you said she is sensitive.
